Very pale caramel malt that adds mouthfeel and body to beers, without adding much colour or taste. Enhances the foam stability.
The malt is dried in a special process at a low temperature, which gives a low degree of caramelization and colouring.
Marketed as Carafoam® in the USA, and malts with similar characteristics are sometimes branded as dextrin malts.
