Boiron Fruit Purees are an easy and high-quality way to get fruit aromas into beer, fruit wine, mead, kombucha, smoothies and pastries. The fruit puree contains only fruit, no added sugar. Very easy to use: the puree can be stored at room temperature and can be added directly to the fermenter.
One to two cartons per 20 litres batch of beverage will give noticeable to pronounced fruit flavours. May add tartness to beverages, which should be taken into account during recipe formulation.
When added to fermented beverages there is a high probability of secondary fermentation of natural occuring sugars in the puree. Avoid slow secondary fermentations the puree should be added at the end of primary fermentation while yeast is still active.
