Wine yeast from Red Star (Fermentis). Selected by the Pasteur Institute in Paris. Widely used in the USA.
Strong fermenter with high tolerance for alcohol, low fermentation temperatures and low concentrations of nutrients. Gives fullness and roundness thanks to the relatively high production of glycerol. Also promotes healthy and clean scents.
Excellent for white and sparkling wines. Can also be added if a fermentation has stalled.
