Recommended for the production of very high attenuating beers even for Very High Gravity fermentation, such as “Barley Wine”.

HA-18 contains glucoamylase from the aspergillus niger. During the fermentation, this enzyme converts remaining higher sugars and dextrines to simple sugars. The attenuation can reach as high as 100%! Can not be reused with the same results.

Able to reach 18% v/v of ethanol, depending on the process and the substrate.
Very good resistance to the osmotic pressure and high fermentation temperatures (thermotolerant yeast).


Attenuation: high
Alcohol tolerance: 18 %
Flocculation: low
Optimum fermentation temperature: 25 - 35 °C (77 - 95 °F)

Det här är jäst på steroider. Jäste ut en Imperial stout till 11,1 % ner till 1,015 FG Lite bekymmersam om det skulle smaka för mycket alkohol, men det verkar som alkohol smaken klingar av efter ett tag. Lite längre lagring så blir det här säkert väldigt bra.
