Appassimento is not a grape, but a method used especially in Veneto in northeastern Italy. The grapes are partly dried in order to increase the concentration. This gives an intense, almost raisinlike wine with low acidity. The alcohol level is also high, due to the higher concentration of sugar from the grapes.
The grape varieties used are typically Corvina and Corvinone.
This method is also called Passito.
