Recipe kit with crushed malt for brewing 20 liters of beer.
Crisp, yet soft. Malty, but quenching. Fruity and slightly tart, but with low hop aroma and bitterness. Pale, cloudy and with a firm head. All this, and more, is what you would expect from a Hefeweizen.
The aromas in this Wheat Beer stems from the highest quality Weyermann®-malt and a Hefeweizen ale yeast strain. The soft maltiness from the wheat adds some body to the beer, while the fermentation process provides fruity aromas of banana and a light touch of clove. The beer is well attenuated and crisp, but retains some body - all balanced by a low but lingering hop bitterness from the Saaz hops.

- Yeast: Fermentis Safale W-68

Pale beer styles may benefit from some treatment of the brewing water. Typically, small amounts of
lactic acid are added to the mash and sparge water. Normal dosage is 1 - 4 tsp per 20 liter.
If you want to experiment with flavours, a popular flavouring addition to Hefeweizen is
raspberries (PDF). We recommend using a
Straining bag or a
PureScreen dip tube filter to avoid a stuck siphon.
Or why not try dry hopping the Hefeweizen for a slightly updated "Hopfenweizen"?
