This Fruited Sour Ale is all about tartness and fruity notes of passionfruit, peach and sour candy. The soft maltiness is just in the background, balancing the beer.

In this recipe kit you find the special Philly Sour yeast from Lallemand. This yeast strain of the species Lachancea has the capability of producing both lactic acid and ethanol during the same fermentation.

Bryggt i många år men aldrig gjort en fruktsuris eller använt ett receptkit! Följde receptet och det blev en lagom balans av passionsfrukt, torr och lättdrucken, en perfekt sommaröl. ph 3.1 och enligt hydrometern jäste den ut fullständigt till 999. Den stod varmt, 26 C, hela tiden. En undran är dock vilken alkoholhalt blir det egentligen? En del socker går rimligtvis åt de första fyra dagarna när jästen producerar mjölksyra. Kommer att använda jästen igen.

Enligt Lallemand ska du kunna beräkna alkoholhalten som vanligt. Under mjölksyraproduktionen avgår inte CO2, vilket innebär att den specifika vikten inte förändras i någon större utsträckning. Skillnaden i alkoholhalt kan annars uppskattas till att vara ca 0,1-0,2 % lägre än den alkoholhalt du räknar fram från standardberäkningen.
